Eat well, feel good with VegSoc
With all the fun of Fresher’s and the stress of uni life it can seem challenging to make time to cook healthy and tasty food.
So here’s a quick, filling, plant-based recipe from VegSoc to get you inspired.
You can chuck this in the oven and get on with assignments, prep for a night out or whatever else you might find yourself doing…
Baked sweet potato with hummus and roasted veggies (serves 1)
- 1 x medium sweet potato
- 2 x tbsp hummus – store bought or homemade
- 2 x garlic cloves
- ½ x red onion
- Handfuls of your favourite veggies e.g. I used:
- Red pepper
- 1 x pinch of salt
- 1 x good sprinkling of black pepper
- 1 x pinch of red chilli flakes
- 1 x tbsp vegetable oil
Preheat oven to 200°C / 180°C fanPrick sweet potato all over and microwave for 5 minsMeanwhile chop veg into small chunks (see picture for reference) and place on a roasting tray with whole garlic clovesDrizzle veg with oil and sprinkle over salt, pepper and chilli flakesMix veg with hands to ensure they’re fully coatedPlace sweet potato in the oven and cook for 10 minsLeave potato in oven and cook for a further 20 mins along with the veg trayRemove from oven and serve: cut the sweet potato lengthways, add a good dollop of hummus and garnish with veggiesEnjoy!
