Vegetarian Tikka Masala Cooking Class

Food is used by many all to reflect their identity and create a sense of belonging. It is used to create new ties amongst strangers, a message here at the heart of slow food! It can be used to express how cultures and people come together to create new food pathways, such as the tikka masala, originating in Glasgow. A combination of Scotland and India and awarded 'Britain's favourite curry'!

Vegetarian Tikka Masala Ingredients:

- 2 tablespoons olive oil

- 1 onion, diced

- 1 carrot, chopped

- 2 tablespoons tomato paste

- 1 tablespoon freshly grated ginger

- 4 cloves of garlic, minced

- 2 teaspoons garam masala

- 2 teaspoons ground turmeric 

- 1 teaspoon chilli powder

- 1/2 teaspoon paprika

- 1/2 teaspoons cumin

- Cauliflower florets

- 200ml vegetable broth

- 1 can of chopped tomatoes

- 1 can of chickpeas or lentils

- 1/2 cup of coconut milk

- 1 tablespoon fresh lemon juice

- Rice
